Foster German Chocolate Cupcakes

Cake:

1 cup butter

4 oz. german baking chocolate

1 cup cocoa powder

1 ½ cups + 2 T. flour

1 teaspoon baking soda

1 ½ teaspoon baking powder

½ teaspoon salt

4 large eggs, room temperature

1 cup sugar

½ cup packed light brown sugar

2 teaspoons vanilla extract

1 cup buttermilk

Coconut Frosting:

1 cup evaporated milk

½ cup butter

1 cup sugar

1 teaspoon vanilla

3 egg yolks

1 ½ cups coconut shreds

Foster Sauce (optional):

½ cup butter

1 ⅓ cups dark brown sugar

7 tablespoons Jack Daniels

3 teaspoons vanilla extract

1 teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 350 degrees. Line a cupcake pan with paper liners and set aside.
  2. Melt butter and baking chocolate together in microwave safe bowl or over stove top. Cool slightly. Stir in cocoa. Set aside.
  3. Add eggs to a mixing bowl and beat for one minute. Add brown sugar and beat until thick and creamy. Add vanilla.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  5. Pour in melted chocolate into egg mixture. (Be sure it is not too hot, don’t scramble eggs.)
  6. Add half of the flour mixture and half of the buttermilk. When combined, add remaining flour and buttermilk. Beat on medium speed for 2 minutes.
  7. Fill cupcake liners ¾ full.
  8. Bake for 18 minutes or until a tester pulls out clean. Cool completely.

For frosting:

Add evaporated milk, sugar, butter, and egg yolks to a saucepan. Whisk to combine. Cook over medium low heat until thickened, stirring constantly, about 10-12 minutes. Remove from heat and stir in coconut, pecans, and vanilla. Cool for 10 minutes.

For sauce:

In a saucepan, combine all ingredients and cook over medium heat until sugar dissolves. Remove from heat.

  1. When cupcakes have cooled, hollow out middle, about ¼ way down.
  2. Fill each with frosting.
  3. Spoon the sauce over top of cupcake and garnish with coconut.
  4. Enjoy!
