How To: Mountain Dew Doritio Cupcakes

Everybody knows the most popular best combinations: apple and cinnamon, bacon and maple, lemon and blueberry. The most popular combination among gamers, however, is Mountain Dew and nacho cheese Doritos. These odd but sinfully delicious cupcakes will spark up your next table top gaming session.

Cake Ingredients:

1 box of lemon cake mix (or your favorite lemon cake recipe).

1 box of lemon pudding mix.

1/2 cup vegetable oil

4 eggs

1 1/4 cup Mountain Dew

 

The first step is pretty easy, just add in all of your ingredients and mix until well combined.

Next, pour your batter 3/4 of the way full in your lined cupcake pan.

Bake at 350 degrees for 16 minutes until they are golden brown. Poke them with a toothpick, if there is no batter left on the sticks, then your cupcakes are done.

Let your cupcakes cool completely. In the mean time, you can get started on your frosting.

Frosting Ingredients:

8 oz. cream cheese, softened at room temperature.

1/4 cup butter, softened at room temperature.

4-5 cups powdered sugar

3 tablespoons Mountain Dew

2 teaspoons of lemon zest

1 teaspoon of vanilla extract

Optional: yellow and green food coloring

1 bag of nacho cheese Doritos

 

First, combine the cream cheese and butter until it’s creamy and combined.

Then, you’re going to add in your powdered sugar one cup at a time. For a thicker frosting, add more powdered sugar. It should look something like this.

Now, it’s time to add in the flavoring. Combine the Mountain Dew, the lemon zest (zest is the yellow part on the outside of the lemon), and vanilla extract. If you would like, add in food coloring to resemble the color of Mountain Dew. I added 2 drops of yellow, and 4 drops of green.  Frost once all of your cupcakes are cooled down.

Finally, it’s time to decorate. I chose to crumble up Dortio pieces on top and decorate with a bigger chip in the middle, but of course, this is optional.

These cupcakes are fun to make and taste absolutely delicious. I would highly recommend making these, and to surprise your friends.
